Mom taught me how to cook, by cooking for me๐Ÿ˜„! Never showed me, never handed me a single recipe, never explained the ingredients. I donโ€™t think Iโ€™ve ever had to help her in the kitchen even ๐Ÿ˜ฌ๐Ÿ˜ฌ! Yep.. I just ate ๐Ÿ˜๐Ÿ˜! So Iโ€™ve learned to cook (from her) by eating what sheโ€™s cooked for me! And I think she learned to cook the same way too?! Cuz I never saw her went to a cooking class!!!! [๐Ÿ“Chinese Wine Chicken Soup๐Ÿ“] One of my favorites. I was always excited when I walk into the house with whiffs of Chinese wine in the air! She added fluffy cut-up omelette which soaked in the aromatic Chinese wine infused soup like a sponge. Think clean, clear, seafoody broth with an assortment of seafood... Slices of abalone, fish, fish maw, clams and check out the size of those prawns (de-shelled even๐Ÿ‘๐Ÿผ๐Ÿ‘๐Ÿผโ€ผ๏ธ) Soft tofu cubes and minced pork to complete the savory concoction. I found myself going back to the soup at every opportunity despite the many other dishes laid out in front of me. @kitchenmaddies โ€˜ popular starter, ๐Ÿฆ Prawn Rolls, or Ngoh Hiang, as it is affectionately known this part of the world! Maddiesโ€™s make their Ngoh Hiangs with a well seasoned minced pork filling packed with distinct five-spice powder aromatics; And added a little crunch with bits of carrots and water chestnuts. Itโ€™s pretty delish.. though I could not detect the prawn in these prawn rolls ๐Ÿคจ... Nonetheless, the savory bite is served piping hot from the fryer and fly out of the kitchen like they were free!! But no, theyโ€™re in fact $4.80, for 2 tightly wrapped rolls which we devoured rather swiftly! Orh Jian vs Orh Nerng ๐Ÿค”The former involves cooking the omelette with starch while the latter, without. @kitchenmaddies โ€˜ Oyster Omelette, found on (almost) every table, is unmistakably the #orhjian starchy version. Swipe left to witness the stretchy, chewy, translucent goo within the omelette. Diehards swear by this goo which demands the right ratio of flour and water for the perfect consistency. A good one is both gooey and soft to the bite. Maddieโ€™s Kitchen nails the consistency. The egg part of the omelette is thick with a crisp exterior and a fluffy core. The oysters? Fat, fresh, juicy and cooked to the perfect doneness ๐Ÿ‘Œ๐Ÿป! Oyster Omelette (with or without starch) is not something I usually order because its always a tad too greasy; and Maddieโ€™s was no exception. But in all fairness, I think itโ€™s hard to make a good one without a little (more) oil. Watching @gold905 โ€˜s @dizzie_t chomping, slurping, and gushing away at @kitchenmaddies for an entire 4๏ธโƒฃ:2๏ธโƒฃ4๏ธโƒฃ minutes was enough to send me and half of the countryโ€™s hungry folks to this no-frills cafeteria serving โ€œ๐’•๐’‰๐’† ๐’ƒ๐’†๐’”๐’• ๐’›๐’Š ๐’„๐’‰๐’‚๐’“ ๐’๐’ ๐‘ถ๐’“๐’„๐’‰๐’‚๐’“๐’… ๐‘น๐’๐’‚๐’…โ€ ๐Ÿƒ๐Ÿปโ€โ™‚๏ธ๐Ÿƒ๐Ÿผโ€โ™€๏ธ๐Ÿƒ๐Ÿปโ€โ™‚๏ธ๐Ÿƒ๐Ÿผโ€โ™€๏ธ ! Hereโ€™s my take, without prejudice, despite the 1-hour wait ๐Ÿ˜“! Naturally, the Cantonese in me was most interested in the Beef Hor Fun ๐Ÿฎ.. and looked forward to the said โ€œ๐’˜๐’๐’Œ ๐’‰๐’†๐’Šโ€ and โ€œ๐’“๐’†๐’‚๐’๐’๐’š ๐’ˆ๐’๐’๐’… ๐’„๐’–๐’• ๐’๐’‡ ๐’ƒ๐’†๐’†๐’‡ ๐’•๐’†๐’๐’…๐’†๐’“๐’๐’๐’Š๐’โ€. Well... There was indeed a detectable amount of wok hei. The flat rice noodles were smokey from the heat of the hot wok ๐Ÿ”ฅ. They didnโ€™t stinge on the sliced beef tenderloin... though I wished it was more tender. Loved the addition of nicely seared bittergourd strips which provided another texture and taste to the dish. Loved that the entire ensemble was finished lavishly with the rich savory black bean gravy (never too much of a good thing!).
