🐠 Steamed Chinese Pomfret with Mushrooms & Salted Prunes. The Chinese pomfret, when steamed, produces a silky soft sweet meat. The flesh is way thicker than that of the black or silver pomfret, yet is also more delicate. A Teochew classic... Place sliced ginger, prunes and mushrooms around fish, inside cavity, under fish and along slits. Add some water to the fish (this will finish a clear broth when steaming is done). Steam at high heat for 10 minutes. And voila! Serve hot!

🚀Surpassed my expectations in every let-me-count-the-ways: (1) Noodles- Perfect al dente Mee pok and Mee Kia noodles; good springy bite, and didn’t get all clumpy. (2) Flavor- Totally nailed the seasoning! Every strand of noodle is nicely coated in the delicious savory vinegary lardy oil. The chili isn’t overpowering and has a good shrimpy zing to it. (3) Ingredients- Generous and fresh. A good amount of crispy pork lard and flat fish that gives oomph to every mouthful! (4) Soup- So clear & so tasty! (5) Service- Self Service. Place your order and wait for it. Chef works really fast so the wait is bearable. (6) Hearty portion at $3.50! (7) Staff- The young Indian Chef is even more dashing in real life! Flashed me a toothpaste commercial smile when I asked if I could take a photo whilst swiftly continuing to cook!!
